mushroom dish, pate, relish, kombucha, pickles
yesterday i made a shiitake and lobster musroom dish with tempeh and a red wine dijon sauce over brown rice. side dish is the pistachio pate from the riceboy sleeps cookbook served on some fresh lettuce leaves.

next pic is my growing kombucha culture. hint: it's the floaty loogy looking thing.

next pic is the relish i set up about 12 days ago. it's done fermenting and delicious. pics on a dish soon!

and the final pic is 3 new batches of pickles i've set up to ferment. from left to right: horseradish mustard, dill mustard, and dill slices.

kombucha mother...
for the kombucha mushroom people. i have started to grow, yes grow, my own kombucha mother from store bought kombucha.
all you need is a good bottle of store bought kombucha that is plain and unpasteurized. you need to reserve 1/2 cup of the kombucha and all the floaty pieces and sediment on the bottom. this store bought brand is what i'm using:

other ingredients include brewing a small amount of black tea with sugar in it to feed the culture. you combine the two and wait for the mother to grow out of the floaty parts you reserved from the original bottle. they need to be covered during cultivation.
the black tea sugar combo.

reserved kombucha parts.

combination of the two.

more as the story develops.
