just made my first ferment relish. should be ready in a week or so. used 2 green zucchinis, 1 yellow zucchini, 1 jalapeno, 1 gypsy pepper, some yellow bell pepper, 2 tbsp dill, and 1/2 tsp each of the following: turmeric, mustard seed, dry mustard, chili flakes, celery seed. also a few grinds of black peppercorn.
